In 2013, in a 4 sqm kitchen, we baked the first batch of cupcakes. Sabie Bakes started offering cupcakes to offices with the family as the marketing team. Baking was done in a small range oven done in batches while I breastfed a month-old baby Sabie. The birth of Josefa Isabel or Sabie, my second born, was how this business started. Like any venture, it was not a decision done overnight, it was a tough decision but to put it simply, the start of Sabie Bakes was a result of self-discovery. It was finding my direction as a young mom and it was my love and passion for food, making it, and serving my family that came to the actualization of Sabie Bakes.
Opportunities in Palawan opened in 2014, and we found our home base in Puerto Princesa. Our little bakery became a part of our bed and breakfast. We started with serving homestyle food to our guests at Ala Amid Bed & Breakfast all using family recipes that have been tried and tested.
Since then, we have joined several fairs and events to showcase what Sabie Bakes can offer, from the Cake Festival 2015 in Robinsons, Paskuhan 2016 and Baragatan 2017. Our location in SM Puerto Princesa, marked our first expansion in 2017 and was well received by Palawenos and guests of Puerto Princesa.
Who is Sabie’s Mom?
I may wear different hats, a baker, an artist, a entrepreneur, a teacher but I am foremost a mom.
Born and raised a Cebuana, I’ve always had a knack for cooking and baking. I love to read cookbooks, watch cooking shows, and experiment in the Kitchen. I was my Mama’s assistant to cook our lunches and dinners. Our oven is especially busy during holidays as it was a tradition for us to give food as Christmas gifts to family and friends. It ranged from Mama’s traditional ube halaya (which is the best of the best!) to my favorite blueberry cheesecake. I also made apple pies and oatmeal cookies, staples of the season. Moreover, Christmas and New year dinners were occasions to try out new festive dishes apart from the yearly menu.
In college, I took the course Fine Arts major in Interior design at the University of San Carlos. Those who knew me as a child would have expected me to take a study in the arts since I have always been interested in this field for the longest time. However, I did not receive any formal training until high school for a summer activity. It was in college that my foundation in design started.
A lot of things in between and due to circumstance, I did not start a career in the arts. I found myself in a new city starting a career far from my field (which is common in our country). For 7 years, I worked in the BPO industry, particularly in Training and Development. I left that work to start the most important job in my life, being a mom.
With Sabie Bakes starting, I took up Fundamentals in Baking and Pastry in the Academy of International Culinary Arts in Pasig. There I learned the basics in baking from bread, cakes, and other classic pastries.
Today, I continue to improve my craft. The principles that I learned from college, work, and further studies have helped me find the niche that I was looking for then. Truly, whatever has happened some of them may be unplanned has lead me here and I think has also helped me realized my purpose. Here is my journey. This is Sabie Bakes.
